Ingredients
Scale
- 1 lb boneless, skinless chicken breast (cut into bite-sized pieces)
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 cup cherry tomatoes (halved)
- 1 cup baby spinach
- ½ cup shredded mozzarella cheese
- ½ cup cooked pasta (optional)
- ¼ cup fresh basil (chopped)
- 1 tbsp balsamic glaze (for drizzling)
Instructions
- Heat the oil: In a large skillet, heat olive oil over medium heat.
- Cook the chicken: Add the chicken pieces to the skillet. Sprinkle with garlic powder, onion powder, paprika, salt, and black pepper. Cook for about 6-7 minutes, stirring occasionally, until the chicken is fully cooked.
- Add vegetables: Toss in the cherry tomatoes and baby spinach. Stir and cook for another 3-4 minutes until the tomatoes soften and the spinach wilts.
- Melt the cheese: Sprinkle shredded mozzarella cheese over the mixture and cover the skillet. Allow the cheese to melt for about 2 minutes.
- Serve: Remove from heat, garnish with fresh basil, and drizzle balsamic glaze on top. Serve as-is or over cooked pasta for a heartier meal.
Notes
- For extra flavor, add a pinch of red pepper flakes or a squeeze of lemon juice.
- Substitute chicken with shrimp or tofu for a different variation.
- If you prefer a creamier texture, stir in ¼ cup of heavy cream before adding the cheese.
